Eating healthy on the go can be hard, especially when there’s pizza involved. One of my favorite recipes to meal prep ahead of time is homemade burrito bowls and it’s been a staple recipe for me over my weight loss journey. Cook everything ahead of time, keep it cold in your favorite Arctic Zone cooler and reheat when it’s time to eat.
Total Time: 30 minutes (not including marinade time) Yields: 4 servings
Ingredients:
Chipotle marinade:
- 2-3 lbs chicken
- 3 tbsp of chipotle peppers in adobo
- 3 garlic cloves
- 1 tsp cumin
- 1 tsp oregano
- 1/4 cup oil
- Half a lime
- 4 tbsp water
- Salt and pepper to taste (1/2 tsp each)
Other ingredients for your bowl but, what I like
- Rice
- Beans
- Salsa
- Hot Sauce
- Sour Cream
- Lettuce
Instructions
- Add all the chicken marinade ingredients (minus the chicken) to a food processor and blend till smooth.
- Add chicken and marinade to a bag and marinate chicken for a minimum of 1 hour but ideally overnight.
- Remove chicken from marinade and sear over high heat to get a good char (grill or griddle works).
- Once they hit 165° internally, they’re done.
- Build your bowls how you like.
- I load up my Arctic Zone PRO 16 Can Zipperless Cooler (available only at Sam's Club) with everything in containers and this is my go to meal when we’re away from home. It’s really helpful to track calories.
