This grilled bruschetta chicken sandwich is fresh, light, and packed full of flavor—it's the perfect dish you'll crave all summer long. Load your ingredients into your favorite cooler and take this sandwich with you wherever you go.
Total Time: 30 minutes Yields: 4 servings
Ingredients:
- 2 lbs chicken breast
- 1-2 Tbsp salt, pepper & garlic rub
- 4 slices of Fresh Mozzarella
- 4 Ciabatta bread rolls
- 4 tsp Balsamic Glaze
- Fresh Basil to garnish
Bruschetta:
- 8 Roma tomatoes
- 1/4 cup fresh basil
- 3-5 cloves minced garlic
- 1 tbsp Balsamic vinegar
- 2 tsp Italian seasoning
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions:
- Season chicken with salt, pepper & garlic
- Make the bruschetta by combing all ingredients

- Grill the chicken over high heat to 165° internal temperature
- Add the mozzarella on top to melt for the last few minutes
