Want to try a new cocktail for the Fourth of July? This Strawberry Butterfly Mimosa Recipe is a patriotic twist on your favorite brunch cocktail is the perfect sipper for your summer holiday. Combining the red from a homemade strawberry syrup and the deep blue of butterfly pea tea, this refreshing cocktail is topped off with your favorite prosecco (or sparkling water to make it non-alcoholic!)
Ingredients
- 1 ½ cup strawberries
- 2 ½ cups water
- 2 tablespoons honey
- 1 tablespoon of dried butterfly pea flowers
- 10 ounces of prosecco (can substitute with sparkling water)
Directions
Strawberry Syrup
- Dice strawberries and add into a medium pan on low heat
- Combine with 1 cup of water and honey
- Let strawberry syrup simmer for 20 minutes or until strawberries start to soften
- Strain strawberry syrup into a glass jar and place in refrigerator to chill
Butterfly Pea Tea
- Place butterfly pea tea flowers into a tea infuser and place in a mug
- Add 1 ½ cups of boiling water and let steep for 10 minutes
- Pour tea into a glass jar and cool to room temperature before placing in the fridge to chill
