Meet Brian Gerwig of @g_bque, a passionate home cook/backyard bbq’er with a love of all things cooking. Brian has always enjoyed cooking, but it was the start of his page in 2020 that really awakened his passion.
This sub is hearty, tasty and easy to make. There isn’t anything more you could want after a day on the trails.
Total Time: 5 minutes Yields: 2-4 servings
Ingredients
- 2-4 rolls
- 2.5 cups of lettuce
- 3 Chicken Tenders
- 6-8oz cooked pancetta
- 1/4 cup shredded parmesan
- 1 cup croutons
Caesar Dressing Ingredients
- 1 cup mayo
- 2 garlic cloves
- 1 tsp anchovy paste
- 1/2 cup freshly grated Parmesan
- Juice from 1 lemon
- 1 tsp Dijon
- 1 tsp Worcestershire
- 1/4 tsp salt and 1/4 tsp pepper
Instructions
- Make the caesar dressing first by mixing together all the ingredients in a medium size bowl. Once combine, set it aside
- Start with 2 big handfuls of lettuce (roughly 2.5 cups)
- Add chicken tenders, parmesan cheese and pancetta. Give it a rough chop
- Add in caesar dressing and croutons and chop till desired consistency
- Scoop it into a hoagie roll and wrap it tightly in foil
- I used my Titan Backpack Cooler, to keep my sub cold while I was hiking and enjoyed this sub at the top of the mountain.
